Michae Bublé playing in the background, a Santa hat on my head, the smell of freshly baked cookies fills the air. It’s the most wonderful time of the year; CHRISTMAS. With Christmas quickly approaching, I’ve decided to share my recipe for sugar cookies. These are super easy to make and of course, Vegan.
Servings: 15-20
Ingredients
Cookies:
- 2 cups flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup sugar
- 1/2 cup Vegan/vegetable-based butter
- 3 tbsp non-dairy milk (add more if the dough is flaky)
- 1/2 tsp vanilla extract
Frosting:
- 1 cup icing sugar
- 1 tbsp non-dairy milk
- 1/2 tsp vanilla extract
Directions:
- Cream butter and sugar until well combined, then add the vanilla extract.
- Sift the flour in a separate bowl, then add salt and baking soda.
- Combine the dry ingredients and the wet ingredients by hand until it becomes crumbly. Then, add the milk and roll the dough into a ball.
- Flour your hands, the rolling pin, cookie cutters and the surface you will be using to roll out your dough.
- Roll the dough out to ideal thickness and cut out your cookies.
- Place the cookies on a tray (which is covered with parchment paper) and bake at 350 degrees for 10-15 minutes. Monitor closely.
- Now for the icing. Add all ingredients to a bowl and mix at a low speed. Gradually increase the speed until the mixture is smooth.
- Sperate the mixture into two bowls. Add a few drops of green food colouring to one bowl and stir.
- once the cookies are done baking, allow them to cool.
- Once cool, you can begin decorating.
